High quality! This was a gift to my son. It is professional quality. He will sharpen his expensive Shun knife on nothing else. In fact, he sharpens all his knives with this now. He is a hobby chef and has turned it into a fine art. He creates gourmet meals often at my second residence, so I bought one for my kitchen there. In the past, nearly every commercial kitchen had one of these as standard equipment. When cooks and butchers knew how to sharpen knives. I recommend getting the optional next finer stone & using it with the medium and fine stone that come standard with this set. You can get an edge back on a dull knife in no time and if you keep up with sharpening them you hardly need to spend anytime on it, definitely worth getting.5Stripped Threads on FrameI'm not going to agree with the excellent reviews this product receives because I think there is a significant design issue. My first sharpening system arrived with one of the locking bars that hold the stones in place loose on one end. Upon closer look, the problem was that the frame that the locking bar screws thread into had the threads stripped. No wonder, since the frame is only .060 (1/16 th) inch thick. The slightest degree of torque on the screws can strip the threads on this thin metal, which I assume was done upon assembly at the factory. I would have grumbled a little and fixed it by placing a nut underneath the stripped hole, but there isn't enough room. I also could have probably tapped out the hole and placed a bigger screw, but decided to return the system instead. Amazon was great, and immediately sent me another one. I opened the box on that one to find one of the stones had come loose from the frame and was laying in the bottom of the tray. I then remounted the stone on the frame. When snugging everything up, I didn't discover any more stripped threads as in the first unit, but the screws widely varied in their degree of tightness from assembly. They do need to be fairly tight, because the stones are held in place only with clamping force, but it obviously doesn't take much torque on the screws to strip the threads in the frame. I think there is a issue here that deserves some design consideration.3Just buy it!Same sharpening stones we use at my work. I cut meat for a living and these work great. With a little patience and practice anyone can learn to sharpen knives like a professional. This would be a one time purchase and last you a lifetime. If stones do wear down they are replaceable. Great product!5The best price I've seen The best price I've seen, on what I feel is the best solution for dull cutlery.While you need to spend time learning how to sharpen a knife properly, this system is one I've been using for over 20 years. This Norton multi oil stone is the best for quickly and easily sharpening a knife. After using this system for a while, simply steeling your blade will return the edge to near perfect form. 5I loved using one of these at the restaurant I worked ...I loved using one of these at the restaurant I worked at, so I knew this was what I wanted for my home too. It came with a bottle of oil to wet the stones, it was all set up, just had to unwrap it, add the oil, lube the stones by rotating to each one facing the well in the bottom, turn to the grit I want on top, and start sharpening. I store it back in the original inner shipping box to keep it clean between uses. I love my long knives, and I like having a stone long enough to get the whole blade on during sharpening.5Solid investmentOk, so you might be debating on the price as I was, but think of it as a lifetime investment because that's what it is...it will be the last knife sharpener you'll ever buy. Electric sharpeners eat knives up and don't hold a candle to this product. I own a restaurant and there is absolutely nothing worse than working with a dull knife. It makes doing your task a nightmare. So, with all that being said there is a small learning curve with it but not much, just get on YouTube to get the fundamentals down. Eventually you will begin to to sharpen your knife by "feel" in no time. I can't begin to tell you that with some practice your knives will be hair splitting sharp! A bit of advice is NOT to use the course stone unless you've got a very dull knife. The medium course stone followed by the fine grit can bring life back into your knife. If you really wanna get it to the next level you can strop it using leather after those two steps, but it's def not necessary. This product may be overkill for someone who cooks occasional, but for anyone who uses knives daily it's a solid investment and I can't praise the craftsmanship enough.5Difficult to use and over rated!!Over rated, not easy to use and not nearly as effective as a 1x30 belt sharpener.And extremely difficult to return. Never had this level of difficulty with amazon.1
