Customer Reviews

nice, but slapdash manufacturing It may have been in the 1980's that I bought my first DMT sharpener. The blue and red stones look identical to the ones in this kit, but they are glued to opposite faces of a plastic prism that was fitted with a clamp for the guide rod.It cut quickly with very little pressure, but after a few days, it would hardly cut. Washing with scouring powder or dish soap didn t help. I had the same trouble with the replacement. I figured diamond stones weren t all they were cracked up to be.Then I discovered that they worked beautifully with baking soda. I d put maybe 1/4 teaspoon of baking soda in a heap, touch my wet fingertip to the soda to pick a little up, and spread it on the wet stone. It would cut nicely. In a couple of minutes, the stone would feel dull. I d rinse it off and apply a little more soda. Apparently, wet baking soda can keep metal fines from clogging a stone. After perhaps 30 years, the stones still worked fine, but the plastic prism broke. I bought a new kit. After I pressed a stone into the new holder, I didn t know how to get it out until I discovered a notch in the holder at the end opposite the cam. There, a small screwdriver or the tip of a knife can pry the stone up.The plastic rods would bind in the sleeves, and the sleeve of one part of the clamp would bind against the back of the other part. I took it apart, trimmed the backs of the clamp with a sharp knife, and slid the rods up and down in the sleeves.I didn t want the diamond faces of the stones to grind together in the bag. I stacked them with the diamond surfaces in the same direction, slipped them into a small plastic bag, put a couple of rubber bands around it, and put it into the kit bag. With the old kit, I d use the blue side, then the red side, then a fine ceramic rod to polish the edge and remove the burr. With the new kit, the green stone if finer than my ceramic rod. I haven t decided if it will remove a burr as well. Minimizing pressure throughout sharpening produces less of a burr. Maybe minimizing pressure also preserves the stones. I don t know if too much pressure can snap the tips off diamonds. The best sharpening angle depends on the use of the blade, the quality of the steel, and how often you want to resharpen. I have two old clamps. One came with the DMT kit decades ago. The other is a Lansky. The lowest position on it gave me 11 degrees on a pocket knife. That was wonderfully sharp, that that steel was quickly dulled. For that knife I used the second position, which gave me 15 degrees. The second position of the new DMT clamp also gives me 15 degrees on a pocket knife. It worked well on my new pocket knife. It s a better steel than my old one. After a couple of months, I tried it at the lowest position, which would produce 11 degrees, like the Lansky. The tip and curved end of the edge came out wonderfully sharp, but the straight part was terrible. I discovered that I d sharpened only one side because on the other side, the stone had ridden on the threaded brass insert that serves as a nut for the screw that holds the hinge together. So, due to a sllipshod design, the new clamp won t let me try an 11 degree angle on a pocket knife. I can get it with the new stones and my Lansky clamp, and my old DMT clamp will let me try 13 degrees. If I want the new DMT clamp to work at its lowest angle with a pocket knife, I ll have to grind down the brass insert. 4Excellent system that gets the job done! I never really leave a review for any of my purchases but this sharpening system from DMT really exceeding my expectations so I want to let others know how good the aligner really is.I was on the fence about buying the aligner after reading the negative reviews. Most of the negative comments are about the edge guide attachment being flimsy. I've only had the aligner for a few days but I have sharpened five of my knives at a couple different angles and the edge guide performed flawlessly and I never felt that it was going to break or anything. I also sharpened a thick bladed military knife and the edge guide held it fine, you just have to follow the instructions and back out the brass screw.Excellent System! The stones included worked awesome... I reprofiled all my blades with the blue stone but the black extra coarse stone would have came in handy for the thick military knife... it took awhile to reprofile it with the blue stone.I always was VERY terrible at sharpening knives freehand and did more damage than sharpening.... after using the aligner all my knives are literally razor sharp and can easily shave hair from my arm and slice paper like butter. 5... is a learning curve to getting this to work good but once you have that down it's all smooth ... There is a learning curve to getting this to work good but once you have that down it's all smooth sailing. A little trick is to sharpie up the edge of your knife so you know your sharpening where you want to. And a practice knife wouldn't be a bad idea to learn on such as a kitchen paring knife so you can get your technique down. Just a heads up don't use pressure on diamond stones or you rip out the diamonds and make it less effective to use. But don't be scared it gets less effective after a few sharpening sessions as there is a small break in time and it levels off to what it should be at.I personally use it with some water mixed in with dish soap to try to keep it from getting clogged up. Though running it under water and scrubbing it with a tooth brush every now and than helps I hear. But something like comet or barkeepers friend is the more preferred way to keeping it clean when you really need to clean theses up. Though I personally use dish soap and an ultrasonic cleaner and it works just fine with that. 5Stones are awesome. Aligner is good but could improve a bit JAN 2013 UPDATENow I've owned this system for a bit over a year and used it very regularly on my own knives as well of those of friends and family and truly gotten very proficient at knife sharpening. So now my feelings now are that the stones are really all you need. The aligner really isn't necessary. It's truly easy enough to juse freehand sharpen using just the stones - and this is much faster than using them with the aligner. You can buy the stones separately, and save money. Larger is better so the 6" stones or 8" stones would be preferable.DEC 3 UPDATE: So now I have had this system for a month and used it regularly and become very adept at it's use. It's easy to learn on and use and my knives are sharper than ever, especially my Japanese knives - truly scary sharp. As to my critique - I maintain my original assessment. The guiding rod portion of the aligner is not long enough - they should add another 3 or 4 inches to it. This would be a really nice improvement for it's use on full sized knives (chef's knifes, nakiris, santokus - anything with a width of 2" or so.For smaller knives the aligner is fine as it is - steak knives, petty knives etc. For cleavers, you will only be able to engage 1/3 - 1/2 of your stones, as the rod will fall out of the guide if you try and go further. I suppose that it might be possible to extend the guide rod with a piece of stiff wire and electricians tape - but I'd rather not mess with it.I'm glad that I bought the xx-fine stone to go with it. The 8000 grit is a nice jump from the x-fine 1200, and is a reasonable upgrade for about $14 or so.ORIGINAL REVIEW:I've only had my set now for 4 days but I've sharpened EVERY knife that I own and that's a pretty significant amount. I even completely rebeveled my cleaver with a 24 degree (total) primary bevel and 32 degree micro-edge bevel. It is now RAZOR sharp ... equal to any of my non-Japanese blades. If you need to completely re-bevel your knives, the xx-coarse is helpful. Otherwise, you won't need that stone. The xx-fine stone is awesome - it really takes those edges to the next level. The key is use very little or no pressure with quick light strokes - let the diamonds do the work! Especially when using the x-coarse or coarse stones - they are very aggressive, especially the x-coarse.DMT could be better about posting more useful videos on youtube but whatever. I figured out a really good technique over the first day on my cheap knives and then made pretty quick work of everything after that. The Aligner could stand some improvement. My big complaint would be that the guide rod is simply too short when I'm doing larger knives. And really too short when doing cleavers. I'm only able to engage about half my stones when doing a cleaver. I'm considering using electricians tape to use some 12 or 10 guage wire to extend it a bit so that it can't slide out and I'd then get full use of my stones with larger blades. So 4 stars but not 5. The Aligner itself would need to be a better design. But it's good and functional. I'm pleased. 4Great, nearly fool-proof knife sharpener Great, nearly fool-proof knife sharpener. Works well for blades up to about 3mm thickness (~0.12"). Beyond that, the clamp really doesn't fit well.Very highly recommend picking up an extra coarse (A4X) stone to go with this.Couple of caveats:- To get more accurate/consistent angles, the blade needs to have flats to clamp to. Clamping on a FFG blade or one with a second edge (be it a false or sharpened edge) will result in inconsistent sharpening- If using the serration sharpener, be very very very conservative. It will eat the serrations very aggressively. 5Solid knife sharpener! This is a great knife sharpener. I bought the extra course expansion stone for it. I would give this 5 stars except that it doesn't grip very narrow knives well. For example a little narrow pocket knife. Otherwise it gets the job done. If you're careful you'll never break any piece of it. Some people have complained that they broke the plastic aligner tab but I don't see how if they were using it properly. 4Finally, a sharpener for those of us who are sharpening-impaired Dull knives suck, and this kit is the fix for those of us who can't sharpen worth a hoot. Reading the other reviews, I also bought the black extra coarse stone to go along with the stones that come in the kit and it does make it much faster to set the edge initially. This isn't the only guided sharpening system in the world--and I'm sure most of them are similarly effective--but this is the only one with diamond hones at this price point, which makes it an excellent value in addition to its functional virtues. One criticism you'll see in many of the reviews is that the blade clamp is plastic, and people speculate that it will break easily. Well, I can tell you that I broke mine the first time I used it, although probably not where and how you'd think it most likely to break, and it was my fault for acting like a ham-fisted galoot. The angle adjusters that fit into the blade clamp have grooves that catch a pin in the cylinder on the clamp in which they slide. I managed to break off the pin inside one of those cylinders, rendering the angle adjuster more or less useless since it just slid up and down. While I waited for the replacement clamp I ordered to arrive, I simply put a small screw in it to hold it and used it like that.I haven't really gone after the kitchen knives yet, but all my pocket, utility, and hunting knives are now razor sharp. The knives that get the most use I touch up once a week or so with the two finest stones, which takes just a few minutes per knife while watching TV.February 2013 update: I added a second clamp to use for longer knives--I just stick both clamps on there and get to sharpening without having to move the clamp. Over the course of the year I've added three stones to the kit: black (extra coarse), silver (extra extra coarse), and beige (extra extra fine). The first two take some drudgery out of getting the proper edge set on the knife, and the last puts it at a near razor like polish, ready for a few strokes on the strop for finishing. 5It works, DMT stones are the best, but some caveat. The unit is a good idea, but the plastic is brittle and I broke a tab off of one of the alignment rods after just a few uses. I am not hard on my gear, and was being careful with the unit when it broke. It took DMT 4 weeks, but they did eventually send me a replacement. The clamp will not clamp onto anything that is over about 1/8" thick, and some thumbstuds get in the way so as to not be sharpenable on this unit. Not to worry, you can use the stones by hand if you need to.I like DMT diamond stones the best, and they take on ZDP-189, 154CM, M390, Elmax, Vanax 75, you name it and they will sharpen it up.You put the knife in the clamp, and then pull the aligner rods to the desired angle setting, and stroke the stone across the knife edge, alternating sides every couple of passes. You can very quickly get a rough-shaving edge on your knives, and if you have the extra fine stones (not included) you can get even sharper.A good unit, use it to see how to sharpen freehand, and then use the stones that way, or just keep using as is.The average person can keep their kitchen knives plenty sharp with this unit. 3Great Sharpener I have never been good at sharpening knives freehand but with this sharpener I have been able to put a shaving sharp edge on most of the knives I own. I still can't get a razor edge on my one crappy Gerber knife made from mystery steel but I believe that to be a product of the crappy steel. All of my other knives have taken an edge very well. Some other reviewers said the blade aligner was flimsy and broke easily but that hasn't been the case with mine, I think they must have been using it wrong. It is always a good idea to read the instructions.I would recommend getting the black extra corse stone if you have several knives you would like to sharpen/reprofile, I started out with just this set and ordered the black stone within two days because I was trying to sharpen over a dozen knives and it was taking too long to reprofile them all with the blue stone. I also got the brown extra fine stone and I would recommend it as well. I strop my blades on leather after finishing with the aligner set which I have found to be necessary for a razor edge, it is very easy to do I just use a scrap piece of leather and some Flitz non-abrasive polishing compound. 5Great stones/diamonds, crappy alignment tool. I have been sharpening knives, axes, machetes, scissors, etc by hand for over 6 years now using diamond stones. I can get a pretty good edge, but after reading a book on the subject, I knew that I was never going to get that "factory" sharp feel on my knives without a tool.So I ordered the DMT Deluxe kit - hoping to get that perfect 20 degree, or 18 degree grind...and I did...for one knife. Then a small plastic nub, inside the alignment tool, snapped off, and it was impossible to get the tool to hold an angle, because of how the degree "marks" are locked in place on that nub/lug. The tool became useless, unless I wanted one bevel incredibly sharp.I immediately emailed DMT expressing my problem. I never did get a response. The injection molded plastic is as brittle as a child's toy, and really not nearly the quality of the stones they include with the kit (which imho, were pretty dang good.) The one knife I did sharpen with the tool took a great edge with just a few swipes, and would have gotten better if I had been able to finish it.It's unfortunate and a shame, that "Made in the USA" can sometimes mean "Made just as cheaply as China, and with poor customer service along with it!" - if the DMT kit were made of higher quality materials, it would be a great kit to ease sharpening - especially when you have tens of knives to sharpen. Alas, it did not live up to the quality of the knives it was sharpening, and was returned - even after giving DMT the benefit of the doubt and seeking a resolution with them first. 2
