DMT 8" Extra Extra Fine - can be a good plate IF you get a good one - consistency seems to be an issue First I own MANY DMT Products - I have been buying DMT products for 25 years, and if I guessed I own over 30 of their different products I still might be underestimating. I have a woodworking shop plus I do a lot of other sharpening around the house - including the need for sharpening yard tools, scissors, kitchen knives, etc. There are many times I like the speed and low maintenance of diamond based sharpening products, and for many applications where the most refined polished edge is not always required it is the best solution in my opinion. I also own a full regimen of waterstones and sharpening jigs or honing guides that I also use on some of my woodworking tools.I recently added a full set of these DMT 8" Continuous Diamond plates to my sharpening regimen, as I wanted something to sharpen my kitchen and pocket knives instead of my smaller handheld hones, and my waterstones. I purchased the Extra Coarse, Coarse, Fine, Extra Fine and this Extra Extra Fine versions of these plates. I have had experience with all the other DMT grits in other tools and plates over the years, but this marked the first time I would purchase and Extra Extra Fine grit from DMT. I read a lot of mixed reviews about this plate on the net - with hot and cold feedback regarding the flatness of the plate, the QC of the diamond distribution on the plate, and other factors. I was interested to see what I would get when I ordered it. Note I have also had experience with their Duosharp bench plates / stones also - the ones with the "interrupted" surface and circular holes of no diamonds.Well, the first DMT8EE that I received was interesting. Not having another Extra Extra Fine plate to compare it to, I was initially a little puzzled upon inspection of the plate. My plate seemed not to have any grit distributed on the business side of the plate. The back of the plate was clearly labeled stating it was not the sharpening surface. But the side that was supposedly the sharpening surface was just as smooth as the back of the plate. When I attempted to hone a pocket knife on it, the plate was getting scratched, and I could feel a little feedback, but it just did not feel right.n This could not be the EE plate I had read about.... and having read feedback about the grit distribution being inconsistent, and even one review that claimed their plate had NO grit, I was immediately suspicious.I called DMT, and honestly trying to figure out if this was a defective plate over the phone was a non-starter. They offered to have me ship it in and have a look, and I thanked them for the offer. Being a new plate, what I did instead was order a plate from a different source. When this one came in, it was a completely different plate with grit you could both see and feel on the business side of the plate. Realize these EE plates have a very fine coating of grit, but it should still be detectable. At that point, I judged the initial EE plate as defective and one that should not have passed QC, and returned it to Amazon.As far as how well the new EE plate works? Well, it does seem to do a decent job at a final hone on my knives. Realize I would not buy this stone if your goal is to get a mirror / polished edge like a 10K waterstone would, but it does bring up a sharp honed edge. Most in the know realize that diamonds give a more "toothy" edge than waterstones if you progress through the finer stones, but for my purposes a toothy edge is OK for my pocket knives or kitchen knives. I sharpen or hone those knives more frequently anyway, and the convenience and speed of the diamond plates is a nice trade off in that respect.Bottom line - I think these DMT continuous diamond plates are good. But I also have found out you have to keep an eye on the quality of the plate you get, and don't be afraid to "try again" and replace it if you got one with an inconsistent grit distribution. I had the same experience with the DMT "Fine" plate I received - the first plate had very uneven grit distribution, and some spots on the plate we raised and the grit felt almost coarse. I realize there is a "break in" period for the plates, but this was beyond just "break in" required - it was just a poorly manufactured plate. Also, pay attention to the flatness of the plate, and check it with a straight edge. As well as a grit distribution issue, my Fine plate had a bow in it.Whether I like these DMT continuous plates more than the DMT plates with the "holes" in them for knife sharpening - the jury is still out. For chisels and plane blade bevels, there is no question I want a continuous surface for touch ups or bevel setting. But for knives I am still in the process of judging which plate I like more. Perhaps I will update this review at a later date when I come to a determination.Good plates, recommended - but pay attention to plate flatness and evenness of the grit distribution.Thanks for reading. 4Dished in the middle. Not flat. It was dished and higher on all edges than in the middle. It took me quite some time to figure this out, as I never thought that the steel plate could be dished. After I realized it I contacted the company and never even received the courtesy of a reply. 1Excellant dmt hone Not broken in yet, but so far it works extremely well. Could not be more pleased with my new extra extra fine 8000 grit hone.Works extra extra fine.Update:Wow!!!REALLY enjoy using this hone, and watching my high end knives advance to the next level of sharp!Like putting hollowpoints in your firearm.This hone is an outstanding investment if you are particular about having sharp blades.This, in my opinion is a "must have"in your arsenal of tools.Pretty sure your blade can't be sharper than your hone will take it.This will definately get you there if you have the skill to use it.Note:Probably not important to use on inferior steel or poorly tempered blades as you may not be able to improve the edge on trashy blades.But if you have invested in good steel, then you need this.In my opinion.Happy hunting. 5Great, if you get one that's not defective Defects, defects, defects! I ordered three of these stones. Fine, extra fine, and extra extra fine. I have been using Japanese stones to sharpen my woodworking tools, but they're so messy, and really hard to keep flat (which is critical for chisels and some plane irons). So now that my combination stone is wearing thin, I decided to invest in these diamond plates. Well the fine one had several raised areas on the surface right out of the package. Like, huge ones! I could see them as soon as I took it out of the box. And my edges caught on them when I tried to use it. So I returned it. The extra fine was great! Nice and flat.But now I ordered an extra extra fine, and it has raised areas too! This time they are smaller, but this is a finishing stone, something like 2000 or 4000 grit. Those small raised areas make my edge look like it was sharpened on the extra coarse stone I used to use to flatten my japanese stones. So now I'm returning the extra extra fine stone. Will update the review if the next one is usable. 3Still working on wearing this thing in Since getting my replacement extra extra fine plate (the first one was opened/used/damaged but replaced immediately and painlessly) I have put it into my sharpening rotation as a medium fine stone. I have flattened antique chisel backs and sharpened many tools/knives waiting for this thing to break in and become the 3 micron fine stone it's supposed to be... but its still very coarse! This is after sharpening at least daily on this plate. Its flat, consistent and of the quality you would expect from DMT, but the long wear-in period was unexpected- perhaps its a sign of its longevity? I don't think the plate is mislabeled and the scratch pattern is consistent. 3Easy effective way to finish your edge There is really nothing comparable to this product on the market, and it is a big improvement in fuss and mess over, say, Japanese waterstones. Because it is so easy to put a good finish on your sharpened knives, you will do it more often (a must I think for chefs' knives). I've seen some reviews questioning whether this is truly 8000 mesh, or something less (and even the instructions indicate that it may be something less before breaking in). I'm afraid I'm not OCD enough to really care, as long as it is in that 3000-8000 range.A quick note: the last time I looked, Amazon's description says you can sharpen on either side of this plate (it is a heavy slab of nickle, and both sides look the same to the casual glance). But there is an arrow on one side of the plate pointing to the diamond impregnated side, and this is the side you want to use for sharpening -- there is only one abrasive side to the plate.After accumulating a few expensive VG-10 and SG2 steel Japanese Kitchen knives, I settled on maintaining them (once a week) with a Coarse, Fine, Extra Fine system of DMT plates. For finishing, I use this the Extra-Extra Fine finishing plate. It takes a bit of practice to use these properly, but once you get a system down, they are probably the least expensive or messy, most reliable system for sharpening high quality blades. There are generally four types of commercially available systems to sharpen your kitchen knives. Here is my (very) subjective comparison of systems:1. Diamond Systems (e.g., DMT): Mess & Effort (Low), Sharpening Quality (Very High), Skill required (Moderate)2. Arkansas stones: Mess & Effort (Moderate), Sharpening Quality (High, not good for steels >60HRC), Skill required (Moderate)3. Japanese Waterstones: Mess & Effort (Very High), Sharpening Quality (The Best), Skill required (High)4. Ceramic sharpening systems: Mess & Effort (Low), Sharpening Quality (High, touch up only), Skill required (Low)I use dish detergent and water on the DMT plates to sharpen, having found that better than other solutions. It keeps everything clean as well. The DMT plates sharpen aggressively, so compared to the other systems, you will sharpen faster and with less effort.I have seen several complaints about DMT plates not being perfectly flat, but I think these are bogus. I have considerable experience inspecting optical flats (these usually need to be flatter than 1/4 wave, which is quite flat) and used the same techniques to eyeball my plates DMT WM8EF-WB 8-Inch DuoSharp Plus Bench Stone-Extra Fine/Fine With Base. The extra fine plate is easy to inspect, since rainbow refractions from the diamonds show off any ripples; additionally, the regular pattern of pits on the plates highlights any unevenness. My plates are very flat. But interestingly enough, not one of my knives (not even my brand new Miyabi) is perfectly flat; certainly not as flat as the plate. Even if there were ripples, I couldn't see them being more significant than you would get on a worn waterstone or Arkansas stone. Maybe there is the occasional bad plate; just send it back and get a new one. The DMT system is in my opinion a much less error prone approach to sharpening than other options.I use the MinoSharp Sharpening Guides 2-Piece Set designed by Global for Japanese style chef's knives (~15 degree edge). Someone mentioned that they are afraid that these will grind down, and change the angle. Well, first, the tolerances are not that fine on the blade angle (anything from 9 degrees to 20 on a side is fine), and the correct technique should be to pressure the sharp edge of the blade, and let the sharpening guide just glide over the stone. If you do this, you will hardly even scratch the sharpening guide. You should see a very even line of sharpened metal around the blade (the first time you sharpen it, you will change the factory angle, and this will be visible) ... a sign that the guide is doing its job.I replaced the Arkansas stone on my Smith's 50008 8-Inch Diamond Tri-Hone 1 with the DMT D8EE 8-Inch Dia-Sharp Continuous Diamond Extra-Extra Fine which slots right into the space (I epoxied it to hold it tight). The DMT system has a bit more surface area, and is a bit more aggressive, while getting the same near-polish. I finish with a strop. I mounted the Body Toolz Horsehide Leather & Canvas Barber Strop on a wood slat, coated with Green Chrome Oxide Compound, 6 oz.Overall the cost is low for all the DMT plates you need: perhaps ~ $200. I prefer a strop over the steel, as it seems to gently and reliably straighten the final edge and seems consistent when finishing with the 4000-8000 mesh (whatever the actual fine-ness of your DMT D8EE 8-Inch Dia-Sharp Continuous Diamond Extra-Extra Fine turns out to be). 5Poorly ground and defects I received and returned 3 of these stones now. I noticed when going from 1500 grit (~8 micron) to this 3 micron stone that the plane iron looked more mirror-like on my 1500 grit. This stone actually made my plane iron duller. This occurred each time.Each stone had the same defects. Here are my observations.First, I noticed the steel looked rather strange on these stones. Likely doesn t have any impact, but it makes me question quality control.Second, when sharpening, the surface of the stone becomes easily marred and tarnished, no matter if you use oil or auto glass cleaner (Paul Sellers style).Third, and most importantly, each stone was poorly ground. You can t feel it with your fingers, but you feel it when you sharpen with them. The stone feels like it is banded, or ribbed. You can see it when it becomes marred. It looks like the grinder did this in bands and they never spent the extra time to ensure they were flat.I emailed DMT customer service directly and never heard back. Apparently when you attain their reputation, why bother anymore? 1Defective, terrible customer service. I purchased this extra extra fine plate expecting to use it as the last stage of my sharpening process for my plane irons. Unfortunately, while using it, I noticed it was creating deep scatches on my blade's bevel. Looking more closely, I notice a bump in the midlde of the stone.I e-mailed DMT, they asked for pictures, and once I sent them in, they said they would sent me a replacement. I've been waiting two months and they've yet to do it. Furthermore, I've sent them extra e-mails and they haven't replied.I've am VERY disappointed with the diamond plate and DMT's customer service. I will never buy a product fron them again. 2Surface appeared to have delaminated, deeply scratched tools This is supposed to be equivalent to an 8000 grit stone. I washed and cleaned it prior to using it to make sure that the surface was clean of any contaminants. Yet it badly scratched my plane blade which I had polished to 4000 grit. As you can see from the picture in the mid upper portion it looks like the surface delaminated. This bubbly protrusion came after I attempted to polish the plane blade. It wasn't there when I received the stone and you can definitely it is raised. You can also see severe surface scratches on the stone. The plane blade looks much worse. It looks like the surface may have been contaminated with larger diamond particles which broke off during sharpening scratching both the stone surface and my plane blade. So I returned it. Sadly not impressed. 1dissapointed Even though the plate performed good, the quality was horrible, for such a price I expected better quality control. Both my 4,000 and 8,000 grit plates were pitted and caused damaged to my edge. Went with Ultra Sharp, quality is much better, life time warranty and someone who actually replies to you. I sent an email to Kris ? its been over 2 weeks and have yet to get a reply, I heard DMT has good service, but my personal experience inst so good. Go with Ultra Sharp (bestsharpeningstones.com) the 2200 plate is awesome ! a 3,000 plate is coming out soon. 3
